Butcher Rottmann Bürge organizes summit of Swiss cheese culture

Am 20. September 2017 haben sich die Meister der Schweizer Käsekunst im Regionalen Naturpark Gruyère Pays-d’Enhaut getroffen, um miteinander die Geschichte und die Bedeutung ihres Handwerks zu teilen.

The three Toggenburg cheesemakers Willi Schmid, Jakob Knaus and Walter Räss were guests at the Alp Lioson d'en Bas in Mosses VD. The invitation was issued as part of the "Small Wonders of the World" campaign, which was developed by Metzger Rottmann Bürge on behalf of the Federal Office for the Environment FOEN and the Swiss Parks Network

The three professional colleagues from western Switzerland invited us: Etivaz AOP cheesemaker Blaise Chablaix, Gruyère AOP producer Pierre Buchillier and François Raemy, master of Vacherin fribourgeois AOP. "We know about each other's cheese production, but we've never met in person. So the invitation was also a unique opportunity for us to learn from each other. And to discover the secrets behind the culinary wonders of the world," says Blaise Chablaix, summarizing the encounter.

The campaign, which Metzger Rottmann Bürge realized on behalf of the Federal Office for the Environment FOEN, invites the whole of Switzerland to discover the many small wonders of the world in the Swiss parks. The cross-media campaign has been on air throughout Switzerland since June 5, 2017 and will run for four years.

As part of the campaign, personalities are invited to one of the Swiss parks at regular intervals to experience one of these "small wonders of the world" in a personal way. Further information: www.kleineweltwunder.ch

The federal government has been promoting the establishment and operation of Swiss parks since December 2007 with the aim of preserving and developing their high natural and landscape values. They are also intended to promote the local economy; around one third of their area is used for agriculture. The federal government has therefore introduced the Swiss Parks product label for products and services from the parks. These foodstuffs must meet the standards of certified regional products and be produced mainly within the park. To date, producers have already had over 1200 products certified.
